Ingredients
  

Tapioca Pearls
  • 1/3 cup instant black tapioca pearls about 60g; use high-quality instant pearls like WuFuYuan
  • 2 tbsp maple syrup divided between servings
Matcha Mixture
  • 4 tsp matcha powder culinary grade recommended
  • 1/4 to 1/3 cup hot water about 60–80ml, not boiling (~175°F/80°C)
  • 2 cups oat milk or almond, soy, or dairy milk
  • ice cubes optional, for serving chilled

Method
 

  1. Bring a small pot of water to a boil. Add tapioca pearls and cook for 2–5 minutes (or as per package). Drain and rinse under cold water.

  2. Divide cooked pearls into two glasses. Add 1 tbsp maple syrup to each. Let sit 15–30 minutes to marinate.

  3. Sift 2 tsp matcha into a bowl. Add 2–3 tbsp hot water. Whisk using a bamboo whisk in a 'W' motion until smooth and frothy. Repeat for second serving.

  4. Pour 1 cup of oat milk into each glass over the boba. Top with prepared matcha. Add ice if desired and stir before drinking.
